Making neules at home, because of their lightness and slimness, is not easy so they are usually bought by Catalans in professional patisseries. Nevertheless some people do them.

Preparation

Clean the lemon and grate the most exterior part of its peel. Mix them with the other ingredients and let them stand for an hour. Make with this very slim circles of twenty centimetres of diametre and cook them in the oven at 175ºC. Roll them quickly around a slim stick and let them cool at room temperature.
