in November 1995. The concept of the restaurant is a "fast casual" hybrid, where customers order at the counter and seat themselves but afterwards are served at their table. Currently the restaurant has locations in Florida, Indiana, North Carolina, Pennsylvania, and Virginia, with the most locations being in Florida.

The restaurant claims to stock over 700 hot sauces from around the world in its stores, including the world's hottest hot sauce, although all may not be available at each location.

On February 21, 2011, a sister restaurant, Tibby's New Orleans Kitchen, was opened in Winter Park, Florida. Tibby's specializes in Cajun and Creole cuisine.
