Winter salami of Szeged

Winter salami is a product which is based on age-old tradition. It is made of a mixture of lean pork and fatty pork belly and spiced according to a secret recipe. The mixture is filled in casings. Then it has a cold smoking curing, a drying and a ripening phase. In the end, the salami becomes covered with noble mould.

Szeged lies at the bank of Tisza. The natural endownments of Szeged and its region are favourable to cultivation of plants and animal husbandry. These geographical conditions and expertise, which is related to this, gives the possibilities to breed pigs with good qualities. The mature pigs, which are used to make salami in Szeged, come from these areas.

About the factory

The production of winter salami was introduced to Hungary by a butcher master of Italian birth, named Pick Mark (in Hungarian usage, the family name is written first). In 1869 Mr. Pick settled down and established a salami-factory in Szeged, Hungary. He developed and improved his business step by step. He made salami in larger quantities when he brought workers from Italy in 1883. The serial production of salami was started in 1885. After the founder’s death in 1892, his widow and her brother managed the operation.
Mark's eldest son, named Pick Jenő, joined the enterprise in 1906. Due to him, a new period in the factory’s history began. He bought the neighbouring ‘Tian’ salami factory, which had become earlier bankrupt. In this way the entire real estate at Tisza was the property of Pick family. Pick Jenő aspired to introduce basic changes with help of modern tools. He recognised the significance of advertisement and he had talent for business. Salami became the main product of the enterprise in the first decades of 20th century. Between the wars, Pick factory became the most significant plant of the Hungarian food industry. Pick salami became global brand. Pick Jenő ran the salami factory on his own from 1934 to its nationalization.

About salami

According to the original recipe, winter salami was made of donkey meat. After a while, however, there were not enough donkeys to kill in Hungary. This is why there was needed a solution. It is invented to replace donkey meat with more-years-old sow meat. It is similarly dry as meat of donkey.

One of the main characteristics of the Pick Salami’s production is that there will be a coat of mould on the rods during drying and maturation. Mould fungi need a chilly temperature and a suitable humidity to settle down. Therefore, these factories were established at riversides, such as Pick Salami-factory at Tisza.

First-class work is unimaginable without technological modernization. This aim and aspiration are present in the salami factory of Szeged. As a result, cooling technology could guarantee the long-lived production at the end of the 1950s. In this manner winter salami preserved its seasonal character only in its name.

The local features give significant qualities, harmonic smells and unique taste to Pick salami. Nowadays the winter salami of Szeged has already conquered the world. It is due to original basic material, traditional technology, weather condition, presence of mould fungi and preserved knowledge.
