 is used. The sausage doesn't have a casing but is put directly into hot water and boiled for about ten minutes and subsequently chilled what gives them their typical "wooly" surface. They can be immedeatly eaten but it's common to fry them before. To do it they are dunked in milk and sauteed until they are golden yellow. In this process they usually swell and then they are served with warm potato salad
