The college opened in 1987 to just over four hundred students and currently has approximately 1,700 students, 70% of whom are studying AS and A2 courses with the remainder following Level 1 and 2 courses or post-18 courses such as the foundation art diploma or university degrees.

In 1999, Carmel College became the first Associate College of the University of Liverpool

 offering a range of 4 year Science and Engineering degree courses with the first year of study at Carmel College. In 1999, Carmel also became one of the first of four sixth form colleges in England to be designated a Beacon College. This status was reconfirmed in 2003 when Carmel gained Learning and Skills Beacon status.

In 2008 work began on replacing some of the college's buildings, a project representing £22m of investment. In Spring 2009 the Notre Dame Centre for Art and Design was officially opened, closely followed in August by the College's main teaching block, the West Park building. The final building in the first phase, the Dalton Building, was completed in July 2010 and now houses the new performance theatre, dance studios and student services centre. The current Principal
