John T, as he is known, has authored numerous books detailing how America eats, including, Fried Chicken: An American Story, Apple Pie: An American Story, Hamburgers & Fries, and Donuts: An American Passion. He is a contributing editor at Gourmet and a food columnist for the U.S. Airways in-flight magazine, the food magazine Saveur and the Oxford American.

Past symposia have included The Sweet Life-Sugar and the South (2005), Southern Food in Black and White (2004), and Appalachia: Exploring the Land and the Larder (2003).
