Root cellar

We live in south Texas, high water table, on flat land. We would llike to have a root cellar, but can't seem to find any information about an "above ground" root cellar. We can't dig here, the water table's too high. I've seen photo's of Straw for above ground - but worry about insects and such. We have never done this, but would like to try. We're a family of 4 so just need a modest space ... Is there a way to do this? if so where do I go go find the information? Hoping to get started / finished spring / summer(maybe early fall).... Are there pre fabed situations? We are middle income.... I wouldn't mind getting a small / med prefab, but how do you bring in the... dirt? what do you use to keep it.... from... eroding? see? I don't know where to start..... please advise - thanks. jaxjr

This is what I have seen some people do, but it's not free. A man took a box car and then built ten inch walls in concrete around it using a walk in freezer door for entry. Then he poured a mound of dirt over that which kept it cool year round. I have also seen them just use thick concrete walls and roof, but make sure it is thick. I hear it is a castle effect where thick walls keep things cool. I have never done this and have only seen it, but it is a thought.
