Thermocouple

I've got a European-made 40kilo coffee roaster, and the temperature readout on it is totally bunk. It's supposed to read out in Celsius, but it's off by some variable degree that changes all the time. The temperature is read using (supposedly) a j-type thermocouple. I purchased another readout to hook up to it, thinking that there was something wrong with the digital readout that came with the machine (the manufacturers didn't seem to think anything was wrong) and the j-type readout is absolutely incorrect, however the e-type seems to match up better with what the temperature really is. The thermocouple "line" is labelled as "Fe-Const" (which is j-type, right?). Anyone have any idea why none of the readouts connected to it are remotely accurate? Thanks in advance for your help.
