Cooking oil

I and my taste buds are often confused when I use any type of oil (my default usually is olive). Recently I made a traditional American breakfast and used Pure Canola Oil in the skillet to cook hash browns. Not only was the smell bad but also the hash browns were nothing like I would eat at any given restaurant, and I mean it, nothing like it. What are they using? What do I use to cook something like hash browns?

Hmm, maybe corn oil? Also make sure you put on plenty of salt.
