Hi,
I was interested in the process of browning in fruit so I looked into it. All I could find was the basic mechanism. I found out that catechol is found in fruit (I also found out that it is highly toxic?!) and it is catalysed into a yellow pigment by catechol oxidase. This is oxidised to form a brown pigment.
Can you give me a link (or explain) to me this reaction and the role of the enzyme in more depth? What inhibits the enzyme? I have looked at Brenda but it doesnt help very much.
